We've had a lot of great local eggplants at our farmer's market, and this sounds like a great idea to use them for. Just top with diced tomatoes or a tomato herb sauce, and it would be perfect! Our slices were about half a centimeter thick. If your oven really is crazy hot you might just try lowering the temp to 200 degrees?
