		<description>Those eggplants look beautiful! We've had a lot of great local eggplants at our farmer's market, and this sounds like a great idea to use them for. Just top with diced tomatoes or a tomato herb sauce, and it would be perfect!</description>

		<description>Hi Alice - no we didn't cover the eggplants, I don't think they should burn if you slice them thinly, so that they'll bake relatively quickly. Our slices were about half a centimeter thick. If your oven really is crazy hot you might just try lowering the temp to 200 degrees?</description>
