I read the Wikipedia article on <a href="http://en.wikipedia.org/wiki/Tofu" rel="nofollow">tofu</a>, and I <em>think</em> the difference between dried and semi-dried tofu is the same as the difference between extra firm and firm tofu. In that case the tofu we usually use is semi-dried, that is, firm. The brand name we use is <a href="http://www.gersh.no/posts/archive/2006/08/tofu-super-tahoe" rel="nofollow">"Super Tahoe To-fu"</a>. We've made this with extra firm tofu as well, and it works just fine too! If you try this recipe out, please let us know how did it turn out!
