I cook a lot of Thai food and I had some coconut milk left over. My wife thought I was crazy when I said I wanted to make coconut mashed potatoes with the wild boar sausages, but I tell you, coconut mash, wild boar sausages and sauted fennel + onions covered in gravy is seriously nice!!! I thought I would check online to see if I was crazy, thankfully I am not. Anyone who hasn't tried coconut mashed potatoes has a mission, TRY IT!!! It is lovely!!
