We love mashed potatoes. We also had some leftover coconut milk from curry roasted tofu and vegetables, and these two facts put together resulted in coconut mashed potatoes. Google told me that in Hawaii, sweet potatoes are often mashed in coconut milk. Here, the coconut flavor hides in the background, but still gives a nice new accent to regular mashed potatoes.
Here’s what we had:
- 8-9 medium potatoes
- 1 carrot
- 1 dl coconut milk
- 1 tablespoon vegetable margarine
- 1 teaspoon salt
- pinch of white pepper
The process was as usual; peeled and sliced the potatoes and the carrot, cooked until soft, mashed with a potato masher, added coconut milk, margarine, and seasonings, and beat with a whisk until fluffy.

Never thought abt cocnut milk instead of cream or milk. Need to try this twist for thanksgiving meal

I came up with this idea tonight (completely indepedantly). I cook a lot of Thai food and I had some coconut milk left over.
My wife thought I was crazy when I said I wanted to make coconut mashed potatoes with the wild boar sausages, but I tell you, coconut mash, wild boar sausages and sauted fennel + onions covered in gravy is seriously nice!!!
I thought I would check online to see if I was crazy, thankfully I am not. Anyone who hasn’t tried coconut mashed potatoes has a mission, TRY IT!!! It is lovely!!
Dave – isn’t it great to come up with a little tweak to a basic recipe that makes it stand out? How funny that you found us while checking “coconut mashed potatoes” on-line, I remember doing that when I first made this!
I just found this after googling coconut mashed potatoes. I made some last night to go alongside my turkey curry with garbanzos & butternut squash and red cabbage. I forgot I didn’t have any milk, and voila! Delicious!
me too! i forgot to buy soy milk and the only remotely milk/stock type item in the kitchen is coconut cream… glad to know i’m not the only one! I’m glad this site came up in my search. Looks great!
